Baking & Recipes : Walnuts Buns

I have had holiday for three days, And it is the last day today. Since last Friday I have been in bad health on my stomach. I slept to have rest twice during the day, in the morning and in the afternoon. So I don’t feel sleepy now, but I feel that gas moves in the bowels and I feel it very revolting. If I could, I want to exchange my whole body to another health one.

I could have time not only to sleep, but also to bake some kinds of bread. This time I introduce a recipe of walnuts bans on the blog.

Walnuts Buns

(10 pieces /1 set:the amount of flour; 400g)

Wheat(Jun-Kyoriki-Ko) Suitable for baking French breads 180g 45%
Rye Milled finely 20g 5%
Water 228g 57%
Egg 40g 10%
Salt 8g 2%
Dried Yeast 1g 0.25%
Sugar 32g 8%
Skimmed Milk Add Flavor of milk to bread 10g 2.5%
Butter 12g 3%
Shortening I use the one made as Trans-Fat free 12g 3%
Walnuts Roasted in oven for 3 minutes, break for 4 pieces and cool it in refrigerator 120g 30%

How to bake it

1. Put all ingredients into the baking machine except butter, shortening and walnuts.
2. Knee them for 15 minutes.
3. Add butter and shortening to the ingredients kneed enough.
4. Knee them for 10 minutes again.
5. Add walnuts prepared beforehand to the dough.
6. Knee them for 5 minutes again.
7. Take the dough and shape roundly, like a ball.
8. Put it into a container and lid it to prevent the dough from drying.
9. keep it at 26 degree Celsius for 90 minutes.
10. Take the dough once and push it gently to be free the air included in the dough.
11. Shape it roundly again, and put it into the container again.
12. Keep it at 26 degree Celsius for 30 minutes.
13. Take the dough and push it again.
14. Cut and divide the dough for 10 pieces.(About 83g / 1 piece)
15. Shape roundly all pieces of the dough and keep it for 15 minutes.
16. Push it gently again and shape it again like a ball.
17. Put all pieces on the oven plate.
18. Keep them at 30 degree Celsius for 35 minutes.
19. Preheat the oven at 230 degree Celsius.
20. After brushing egg on the top of every buns, and bake them at 230 degree Celsius for 11 minutes.
21. Take away from the oven as soon as possible after baking and cool them for 1 hour at least.

You must meet and enjoy the wonderful combination produced by the aroma of walnuts and bans. It is suitable for breakfast, lunch or other all occasion when you have something to eat! My favorite item which makes the best combination with the buns is cream cheese!
